Also known as Huevos Revueltos Con Salsa, this tasty breakfast favorite is made with fresh cilantro, ripe tomatoes and zippy jalapeño peppers creating authentic Mexican flavor.

Ingredients

  • Salsa Ingredients

  • 1
    tomato seeded, chopped
  • 1/4 cup
    chopped onions
  • 1-2 tsp.
    seeded jalapeno pepper, finely chopped
  • 2 tsp.
    chopped cilantro
  • Eggs Ingredients

  • 1 cup (8 oz.)
    Better'n Eggs®
  • 2
    whole wheat tortillas (8 inch), warmed
  • 1/2 cup
    shredded lettuce, optional

Instructions

  • In small bowl combine all salsa ingredients; set aside.

  • Spray 12-inch nonstick skillet with nonstick cooking spray. Add Better’n Eggs. Cook 3 to 4 minutes, stirring occasionally, until eggs are set but still moist.

  • To serve; place warm tortilla on plate; top each with ¼ cup lettuce. Place ½ of the eggs onto lettuce. Top with ½ of salsa. Repeat with remaining tortilla. Serve immediately.
