Making an egg salad sandwich doesn't get any easier than using Better'n Eggs®. No need to make time to boil, peel and chop eggs in this recipe!
Ingredients

1 Tbsp. butter or margarine

2 cup (16 oz.)Better'n Eggs®

1/4 cup finely chopped celery

1/4 cup finely chopped red bell pepper

1/4 cup mayonnaise

2 Tbsp. relish

Salt and Pepper

12 slices white or whole wheat bread
Instructions

Melt butter in 10-inch non-stick skillet over medium heat. Add Better'n Eggs. Cook 3 to 4 minutes, stirring occasionally, until Better'n Eggs are set but still moist.

In medium bowl combine cooked Better'n Eggs, celery, red pepper, mayonnaise and relish. Salt and pepper to taste. Cover; chill at least 1 hour to blend flavors. Serve egg salad inbetween sandwich bread.

Tip: Lettuce and sliced tomato are perfect additions to a Better'n Eggs salad sandwich.
